Recipe: CBD Infused Hummus

Hummus makes an appearance in our food shops without fail every week. Partly because I use it as a distraction snack to stop me from eating through my chocolate stash before the weekend arrives and partly because it's deliciousness never gets old!

We are coming to the end of Veganuary now and I am sure most of those taking part this year will be grateful for the wonders of hummus. If that resonates with you, this is the 5-minute quick recipe you need, to raise your hummus-eating ways up a level.

Homemade hummus is so much better than the store-bought version and another easy way to incorporate CBD into your diet! You can get creative with the flavours by adding a roasted pepper, avocado (my personal fave!) or even beetroot. 

I serve hummus with carrot or celery sticks, toasted pittas and or breadsticks. I also absolutely LOVE a carrot and hummus sandwich! I know it might sound like an odd combination but it’s definitely a ‘don’t knock it before you try it’ thing!

TOP TIPS

Use ice to make the hummus fluffy

To make avocado hummus, add an avocado and switch the lemon for a lime!

To make red pepper hummus roast 1 large red pepper for 20 mins at 200°C/180°C fan and once cooled, add it to the food processor with the remaining ingredients. 

INGREDIENTS (serves 4)

5 ml Valencia Orange Love Hemp® CBD Liquid Oral Oil Drops 600mg strength (25mg per person)

1 tin of Chickpeas, drained

2 tbsp Tahini

2 cloves of Garlic

2 tbsp Good quality olive oil

2 Ice cubes

1 Large lemon, juiced

(opt.) 1/2 tsp Ground paprika

Splash of cold water, if needed

METHOD 

  1. Rinse your chickpeas, saving a few chickpeas for garnish and simmer the rest for 15-20 mins.
  2. Once the chickpeas have cooled them along with the remaining ingredients to a food processor and blend until creamy (about 3 minutes). If the consistency is too thick, cautiously add a splash of water 1 tsp at a time until you reach the desired consistency.
  3. Add a generous pinch of salt, or to taste and serve.
